While walk in freeze dryers have unrestricted vapor flow, to a degree, they have more drawbacks then positives.
while it might seem like they are a good design, scaling up will be a problem. knowing the limitations upfront can help you make the right choice. sanitation, innacurate heating , uncontrolled heating based on inacurate processes, will mean that your product is likely drying at different rates, and the quality of the product will change throughout the machine as a result. You will see hot spots, some trays will over dry and others will still have wet product. For most items this is a bad design. unless your electric heated trays have a temp probe on every tray, you are probably going to be doing uneefficent drying and your runtimes will be longer to make up for undried product, leading you to possibly having denatured, vacuum dried product instead of an even freeze dried profile. Also scaling up will prove to be a problem. the edge effect is a know phenomena in freeze drying, but when you have 420 trays and they all are not the same temp, you will get hot spots and over dryied product. Which will lead you to putting less product on your tray then you would, before achieving condenser overload.
